  • 2 tbsp white vinegar

  • Salt and pepper, to taste


Instructions

  1. Heat oil and sauté aromatics: Heat the olive oil in a medium saucepan over medium heat. Add the finely diced onion and minced garlic and sauté for 2-3 minutes until they soften and become fragrant.
  2. Add tomatoes and cook: Stir in the diced tomatoes and continue to sauté for 5 minutes, allowing the tomatoes to soften and release their juices.
  3. Simmer with seasoning: Add the sugar, white vinegar, and Hungarian paprika to the saucepan. Stir well and let the relish simmer gently for 10 minutes, allowing flavors to meld and the mixture to thicken slightly.
  4. Season and store: Season with salt and pepper to taste, remove from heat, and transfer the tomato relish to a jar. Allow it to cool before refrigerating. The relish can be stored in the refrigerator for up to one week.
