Ingredients

Nuts

  • 1 cup raw almonds
  • 1 cup raw walnut pieces (substitute with additional almonds or walnuts if desired)
  • 2 cups dry roasted unsalted peanuts

Syrup Mixture

  • 1/4 cup honey
  • 1/4 cup brown rice syrup
  • 1/4 teaspoon salt

Chocolate Coating

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil


Instructions

  1. Prep Pan: Preheat the oven to 350°F (175°C). Line a rimmed quarter sheet pan or a 13x9-inch baking dish with parchment paper and lightly spray the parchment with cooking spray to prevent sticking.
  2. Combine Nuts: In a medium bowl, place the raw almonds, raw walnut pieces, and dry roasted unsalted peanuts. Toss them together to evenly mix the nuts.
  3. Prepare Syrup Mixture: In a small microwave-safe bowl, combine the honey, brown rice syrup, and salt. Heat in the microwave for 30 seconds or until the mixture is hot and easily pourable.
  4. Coat Nuts: Pour the warmed syrup mixture over the combined nuts and stir thoroughly to ensure all nuts are well coated with the sticky syrup.
  5. Press and Bake: Transfer the nut mixture into the prepared baking dish. Press down the mixture firmly and evenly using a wooden spoon, rubber scraper, or parchment paper, as the mixture will be sticky. Bake for 10 to 15 minutes, checking after 10 minutes, until the mixture turns golden and bubbly.
