Ingredients

Churros

  • 1/4 cup caster (superfine) sugar
  • 2 tsp ground cinnamon
  • 1 cup plain (all-purpose) flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1 tbsp vegetable oil (canola or olive oil, not extra virgin)
  • 1 cup boiling water
  • 2 cups+ vegetable or canola oil (for frying)

Chocolate Sauce

  • 1/2 cup dark chocolate or semi-sweet chocolate chips
  • 1/2 cup thickened (heavy) cream


Instructions

  1. Prepare Cinnamon Sugar Coating: Combine caster sugar and ground cinnamon in a shallow bowl and set aside for coating the fried churros.
  2. Make the Batter: In a mixing bowl, whisk together the flour, baking powder, and a pinch of salt. Add the vegetable oil and boiling water, stirring until just combined. The batter should be thick and gummy, resembling a wet sticky dough rather than thin or watery.
  3. Prepare Piping Bag: Transfer the dough into a piping bag fitted with an 8mm (1/3 inch) star tip nozzle. Set aside while you heat the oil.
  4. Heat the Oil: Pour about 5 cm (2 inches) of vegetable or canola oil into a small deep skillet, wok, or pot. Heat over medium-high heat until the oil reaches 170°C (340°F). Alternatively, drop a small cube of bread into the oil and time how long it takes to turn golden; it should take about 20 seconds.
  5. Pipe and Snip Dough: Carefully pipe 15 cm (6 inch) lengths of dough directly into the hot oil. Use scissors to snip the dough close to the oil surface to avoid splashing. Fry 3 to 4 churros per batch, making 10 to 12 churros in total.
  6. Fry Until Golden: Cook the churros for 2 to 3 minutes, turning occasionally, until they are golden brown and crisp on all sides.
  7. Drain and Coat: Remove the churros using a slotted spoon and place them on paper towels to drain excess oil. While still warm, roll the churros in the cinnamon sugar mixture to coat evenly. Serve hot.
  8. Make Chocolate Sauce: In a heatproof bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and the sauce is smooth. Allow to cool and thicken for 5 minutes before serving with the churros.
