Instructions
- Prepare Grapefruit Peels: Cut each grapefruit into 4 wedges and remove the peel from each wedge to yield about 8 peels. Slice these peels into chunks or long strands for candied slices.
- Boil to Remove Bitterness: Place the peels in a pot with about 1 inch of water covering them. Bring to a boil on the stovetop, then remove from heat. Drain and repeat this boiling with fresh water 4 times to eliminate bitterness from the peels.
- Cook Peels in Sugar Syrup: After the fourth boil and draining, combine 4 cups of water and 4 cups of sugar in the pot. Stir until sugar dissolves, then add the grapefruit peels back in. Boil over high heat for about 30 minutes, stirring occasionally, until large opaque bubbles appear and the peels become completely translucent.
- Strain and Save Syrup: Drain the cooked peels over a heatproof bowl to collect the simple syrup, which can be saved for cocktails or other uses.
- Coat in Sugar: Place 1 cup of sugar in a bowl and toss the hot grapefruit peels in it until they are fully coated. Spread the coated slices on a plate to cool and set.
