This Protein Granola recipe is a quick and nutritious homemade granola packed with protein powder, rolled oats, nuts, and peanut butter, sweetened naturally with maple syrup. Ideal for breakfast or a wholesome snack, it is baked to a crisp golden perfection and can be customized with your favorite mix-ins once cooled.

- 2 1/2 cups rolled oats (225g, gluten free if needed)
- 1 cup protein powder (100g)
- 1/2 cup chopped nuts or seeds (60g)
Wet Ingredients
- 1/2 cup peanut butter (120g)
- 1/3 cup maple syrup (80ml) or honey
Instructions
- Preheat Oven and Prepare Tray: Preheat your oven to 160°C (325°F) and line a large baking tray with parchment paper to prevent sticking and ensure easy cleanup.
- Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats and protein powder thoroughly to ensure even distribution.
- Heat Wet Ingredients: Place the peanut butter and maple syrup in a microwave-safe bowl and microwave in 20-second intervals, stirring between, until the peanut butter has melted and the mixture is smooth.
- Combine Wet and Dry: Pour the melted peanut butter and syrup mixture over the oats and protein powder mixture, stirring well to fully incorporate all ingredients into a uniform granola mixture.
- Bake the Granola: Spread the granola mixture evenly onto the prepared baking tray. Bake in the preheated oven for 20 minutes, stirring halfway through cooking to ensure even baking and color.
- Cool and Crisp: Remove the granola from the oven; it should be lightly golden and brown around the edges. Stir once more, then allow it to cool completely on the tray. It will continue to crisp as it cools.
- Add Mix-ins: Once the granola is at room temperature and fully crisped, transfer it to a large bowl and add any desired mix-ins such as dried fruit, chocolate chips, or additional nuts.
