Instructions

  2. Slice Thinly: Using a sharp knife or mandolin slicer, cut the sweet potatoes into very thin slices. The thinner the slices, the crisper the chips will be.
  3. Toss with Oil and Salt: Place the slices into a large bowl and drizzle with 1 to 2 tablespoons of olive oil. Add 1 teaspoon of good quality salt and, if desired, a sprinkle of smoked paprika. Toss the slices well to evenly coat.
  4. Arrange in Dehydrator: Lay the sweet potato slices flat in a single layer on the dehydrator trays, making sure none overlap to ensure even drying.
  5. Dehydrate: Set the dehydrator temperature to 75°C (167°F) and dry the chips for 10 hours. Check for doneness after this time and, if necessary, continue drying in 2-hour increments until the chips are crisp.
  6. Store: Once fully dried and crispy, remove the chips from the dehydrator and allow them to cool. Store in an airtight container to maintain crunchiness.
