Description
These Healthy Spinach Tortillas are a nutritious twist on traditional tortillas, incorporating fresh baby spinach and chickpea flour for added protein and fiber. Perfect for tacos, burritos, or wraps, these gluten-free tortillas are easy to make with simple ingredients and a quick cooking process using a stovetop skillet.
Ingredients
Dry Ingredients
- 1 cup chickpea flour (also called garbanzo bean flour)
- 1/2 cup tapioca flour/starch
- 1/3 tsp salt
Wet Ingredients
- 2 oz fresh baby spinach leaves
- 1 - 1 1/8 cup water (adjust based on desired tortilla thickness)
Instructions
- Prepare the batter: Process all ingredients in a food processor or blender until the batter is smooth. Use 1 cup of water for thicker and smaller tortillas ideal for tacos, or about 1 1/8 cups of water for thinner and larger tortillas suitable for burritos.
- Heat the skillet: Preheat a non-stick skillet over low-medium heat. Adding a few drops of oil is optional, but not necessary as the tortillas cook well without it.
- Cook the tortillas: Pour approximately 1/3 cup of batter into the heated skillet, spreading it to form a tortilla shape. Cook for about 2 minutes on one side until set, then flip and cook the other side for about 1 minute until lightly browned and cooked through.
- Serve: Enjoy your healthy spinach tortillas warm as a base for tacos, burritos, or wraps.
Notes
- Use a non-stick skillet to prevent tortillas from sticking.
- Adjust water quantity to achieve desired tortilla thickness and size.
- Optionally add oil to the skillet for easier flipping, but it’s not required.
- Chickpea flour adds protein and a slightly nutty flavor while keeping the recipe gluten-free.
- Store leftovers covered in the refrigerator and reheat in a skillet or microwave.
