- 8 Medjool dates - pitted
Filling and Topping
- 150 g (1 cup) Mango - roughly chopped
- 150 g (0.75 cup) 0% Fat Free Greek yogurt
- 100 g (0.5 cup) Light cream cheese
- 1 tablespoon Runny honey
- 100 g (0.75 cup) Frozen raspberries
Instructions
- Make the base: Put 50 g almonds and 8 pitted Medjool dates into a food processor and blitz until a thick paste with a little texture forms, ensuring it’s not over-processed to avoid it becoming oily and dense.
- Prepare the mango puree: Place 150 g roughly chopped mango into a blender and blend until smooth to form a fresh mango puree.
- Mix the cheesecake layer: In a mixing bowl, combine 150 g 0% fat-free Greek yogurt, 100 g soft light cream cheese, and 1 tablespoon runny honey. Mix until well blended and creamy.
- Assemble the cheesecakes: Press the date and almond mixture evenly into the base of small serving glasses (approximately 150ml) to create a firm layer.
- Add the creamy layer: Spoon the yogurt and cream cheese mixture carefully over the base layer in the glasses.
- Top with mango and raspberries: Gently spoon the mango puree on top of the creamy layer, then finish by adding 100 g frozen raspberries as the topping.
- Chill: Refrigerate the assembled cheesecakes for enough time to allow the layers to firm up and the flavors to meld, serving chilled for the best taste and texture.
