Instructions
- Cook the Ground Beef: Heat the sesame oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook it thoroughly, breaking it apart with a spoon and stirring frequently until it is no longer pink.
- Sauté Vegetables: Remove the cooked beef from the pan and drain any excess grease. Add a little more oil if needed, then sauté the chopped onions, minced garlic, and diced carrots over medium-high heat for about 5 minutes, or until the vegetables are soft and fragrant.
- Combine Beef and Broccoli: Return the cooked ground beef to the pan along with the frozen or fresh broccoli. Stir everything together well to combine the ingredients evenly.
- Add Quinoa: Stir in the yellow quinoa and cook it for 1-2 minutes to toast the grains slightly, enhancing their flavor.
- Add Broth and Bulgogi Sauce: Pour in the low-sodium beef broth and the bulgogi sauce. Bring the mixture to a boil, making sure to scrape the browned bits from the bottom of the pan to prevent sticking. Once boiling, cover the skillet, reduce the heat to low, and let it simmer gently for about 20 minutes, or until the quinoa is fully cooked and has absorbed the liquid.
