Potatoes

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Optionally, lightly grease 12 muffin tins, especially if they are not non-stick, to prevent sticking.
  2. Make Cheese Mixture: In a medium bowl, combine the shredded Gruyere, Parmesan, chopped fresh thyme (or dried thyme), kosher salt, and minced garlic. Mix thoroughly to evenly distribute flavors.
  3. Prepare Potatoes: In a large bowl, coat the thinly sliced Yukon Gold potatoes with melted butter. Use your clean hands to gently toss and ensure every slice is evenly buttered.
  4. Assemble Potato Stacks: In a 12-cup muffin tin, begin layering 4 potato slices followed by approximately half a teaspoon of the cheese mixture. Repeat this layering process (4 potato slices, then cheese) until the stacks rise above the rim of the tin, typically about 4 layers, finishing with cheese on top.
  5. Bake Covered: Tent the muffin tin loosely with foil to cover the stacks and bake for 15 minutes. This allows the potatoes to begin steaming and cooking through gently.
