Ingredients

Teriyaki Sauce

  • 1 teaspoon fresh ginger, grated or minced
  • 2 tablespoons corn starch
  • ¼ cup water (for slurry)
  • 1 tablespoon orange zest

Stir Fry

  • 1 pound ground turkey
  • 2 teaspoons sesame oil
  • 3 cups broccoli florets (fresh or frozen)
  • 1 small onion, small diced
  • 1 cup shredded carrots
  • Salt and pepper to taste


Instructions

  1. Prepare the Teriyaki Sauce: In a small saucepan over medium heat, combine ¾ cup water, soy sauce, minced garlic, grated ginger, honey, and brown sugar. Stir to combine and bring the mixture to a low boil.
  2. Thicken the Sauce: In a separate small bowl, whisk together ¼ cup water and corn starch until fully dissolved to create a slurry. Slowly pour the slurry into the boiling sauce while whisking continuously. Allow the sauce to thicken slightly, then remove from heat. Stir in the orange zest and set aside until ready to use.
  3. Cook the Aromatics: Heat sesame oil in a wok or large skillet over medium-high heat. Add the diced onion and cook for several minutes until softened and translucent.
  4. Cook the Turkey: Add the ground turkey to the skillet with the onions. Cook, breaking the turkey apart with a spatula, until fully cooked and reaches an internal temperature of 165°F, about 7-10 minutes.
  5. Add Vegetables: Stir in the broccoli florets and shredded carrots. Cook until the vegetables are heated through and tender, about 4-5 minutes.
  6. Combine with Sauce: Reduce the heat to low and pour in the prepared teriyaki sauce. Stir well to coat all the ingredients and let simmer for several minutes to blend the flavors.
  7. Serve: Remove from heat and serve the stir fry hot over cooked rice or alongside your favorite side dish.

Notes

  • You can substitute ground turkey with ground chicken or lean pork if desired.
  • Fresh broccoli is preferred for a crisp texture, but frozen broccoli works well too.
