- Green onions (white and green parts, thinly sliced, for garnish)
- Toasted sesame seeds (for garnish)
Instructions
- Cook the meat: Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook, breaking it apart with a spatula, for 7-8 minutes until fully cooked and no longer pink. Transfer the cooked turkey to a clean plate and set aside.
- Cook the veggies: In the same skillet, add the remaining 3 tablespoons of avocado oil. Once hot, add the shredded carrots, thinly sliced red bell pepper, broccoli florets, and thinly sliced yellow onion. Season with salt and black pepper, then stir-fry the vegetables for 5-7 minutes until they become bright in color and are crisp-tender.
- Make the sauce: Meanwhile, in a large bowl, whisk together soy sauce (or Tamari), water, brown sugar, rice vinegar, cornstarch, fish sauce, sesame oil, chili garlic sauce or sriracha (if using), finely minced garlic, and minced ginger until well combined.
- Add sauce to filling: Pour the prepared sauce into the skillet with the cooked vegetables. Stir constantly for 1-2 minutes as the sauce thickens and coats the back of a wooden spoon. Return the cooked ground turkey to the skillet and toss everything together until well combined and heated through.
- Serve: Spoon the teriyaki turkey and vegetable stir-fry over cooked white rice. Garnish with thinly sliced green onions and toasted sesame seeds as desired. Enjoy immediately for a fresh, delicious meal.
