Instructions

  1. Heat the oil: Start by heating 1 1/2 tablespoons of olive oil in a large skillet or casserole over medium heat until shimmering.
  2. Sauté vegetables: Add the diced onion and chopped red bell pepper to the skillet. Sauté for about 3-4 minutes until they soften and become fragrant.
  3. Cook the ground turkey: Add the ground turkey to the skillet and use a spoon to break it apart as it cooks. Cook for 5-6 minutes until browned and no longer pink. Season with salt, pepper, 1 teaspoon paprika, and 1 teaspoon Mexican oregano while cooking.
  4. Add canned ingredients: Stir in the fire-roasted diced tomatoes, black beans, corn, and green chiles. Mix everything well to combine all flavors.
  5. Simmer the mixture: Reduce the heat to low and cover the skillet. Let it simmer for 5-10 minutes, allowing the flavors to meld together and the mixture to heat through.
  6. Add cheese and garnish: If using cheese, sprinkle it on top right while the skillet is still warm so it melts slightly. Garnish with fresh chopped cilantro and add optional toppings like avocado slices and sour cream before serving.
