Ingredients
Ground Turkey Mixture
- 1 lb ground turkey
- 1 Tbsp sesame oil (or favorite cooking oil)
- 2-3 garlic cloves, minced
- 2 tsp grated ginger
- ½ tsp smoked paprika
- ½ tsp onion powder
- 3 Tbsp low sodium soy sauce
- 1-2 Tbsp sriracha
- 2-3 Tbsp chicken broth
- 2 tsp honey
- ½ tsp black pepper
- ½ tsp sea salt, more or less to taste
- 2 tsp corn starch
Bang Bang Sauce
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- ½-1 Tbsp sriracha (adjust to taste)
- 1 tsp rice vinegar
- 2 tsp honey
To Serve

- Shredded carrots

- Shelled edamame
- Pickled onions
- Avocado

- Sesame seeds
Instructions
- Prep Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until well combined. Adjust the sauce by adding more sriracha for extra spice or more honey and sweet chili sauce to mellow the heat. Chill the sauce until ready to serve to enhance the flavors.
- Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat until shimmering. Add the ground turkey, breaking it into small pieces with a spatula. Cook until the turkey is browned and reaches an internal temperature of 165°F, about 6-8 minutes.
- Add Seasonings and Simmer: Reduce heat to medium-low and add minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt to the skillet. Stir well to combine and let simmer for 2-3 minutes, stirring occasionally to meld the flavors.
- Thicken the Mixture: Sprinkle the corn starch evenly over the turkey mixture and stir thoroughly to incorporate. This will thicken the sauce around the meat. Optionally, stir in about 2 tablespoons of the prepared bang bang sauce for extra flavor just before serving.
- Assemble the Rice Bowls: In serving bowls, layer cooked rice and your choice of fresh veggies such as shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado, shredded cabbage, and green onions. Spoon the ground turkey mixture over the top, then drizzle generously with bang bang sauce. Garnish with sesame seeds and additional sliced green onion as desired.
