Instructions

  1. Cook the sweet potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced sweet potatoes and a pinch of salt, stirring occasionally. Cook for about 8–10 minutes until they begin to soften and develop a golden color.
  2. Steam the sweet potatoes: Pour in ½ cup of bone broth, cover the skillet with a lid, and allow the sweet potatoes to steam for a few minutes until fork-tender. This prevents burning while finishing the cooking process.
  3. Sauté the ground turkey and aromatics: Push the sweet potatoes to one side of the skillet. If needed, add a little more olive oil. Add ground turkey, diced onion, and minced garlic to the open space. Cook for 5–7 minutes, breaking up the turkey, until browned and fully cooked.
  4. Combine and season: Stir the cooked turkey with the sweet potatoes. Add diced bell pepper, cumin, smoked paprika, chili powder, salt, and black pepper. Cook together for 3–5 minutes until the veggies soften and the mixture becomes fragrant.
  5. Wilt the spinach: Toss in the chopped spinach and stir until wilted, about 1–2 minutes.
  6. Add cheese and serve: Sprinkle shredded mozzarella cheese evenly over the skillet and let it melt for about a minute. Scoop the mixture into bowls and garnish with sliced avocado, cottage cheese or Greek yogurt, a drizzle of honey, and fresh parsley if desired. Serve warm and enjoy!
