Instructions

  1. Cook egg noodles: Bring a pot of salted water to a boil and cook the egg noodles according to the package directions until al dente. Drain and set aside.
  2. Cook until the beef is thoroughly browned and onions are softened, about 7-8 minutes. Drain any excess grease and transfer the beef mixture to a bowl.
  3. Cook mushrooms in butter: Return the skillet to medium heat and add butter. Once melted, add the sliced cremini mushrooms and cook until browned and tender, about 5 minutes.
  4. Create the roux and sauce base: Sprinkle the flour over the mushrooms, whisking constantly to absorb the butter, and cook for about 1-2 minutes to remove the raw flour taste.
  5. Add beef broth and Worcestershire sauce: Slowly whisk in the beef broth and Worcestershire sauce, increasing heat to high. Bring the mixture to a boil and cook for 2-3 minutes until the sauce thickens slightly.
  6. Incorporate sour cream: Reduce heat to medium and whisk in the sour cream until smooth. Taste and adjust seasoning as needed. If the sauce becomes too thick, add additional beef broth a little at a time to reach desired consistency.
  7. Combine beef and sauce: Add the browned ground beef back into the sauce and stir to combine. Heat through until the mixture is evenly warmed.
