Ingredients

Chicken

  • 4 boneless skinless chicken breasts (pounded to even thickness, 1 inch or less)
  • 2 tablespoons oil
  • 1 teaspoon Italian seasoning (or ¼ teaspoon each dried basil, dried oregano, and dried thyme)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper

Topping

  • 3 roma tomatoes (diced)
  • Salt and pepper to taste
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons finely chopped fresh basil

Other

  • 4 slices mozzarella cheese


Instructions

  1. Season the chicken: In a large bowl, combine chicken breasts, oil, Italian seasoning, garlic powder, salt, and black pepper. Stir well to coat each chicken breast evenly with the seasoning mixture.
  2. Grill the chicken: Preheat your grill to medium-high heat. Place the chicken on the grill and cook for 6-8 minutes per side, or until the chicken is fully cooked through and no longer pink in the center.
  3. Prepare the bruschetta topping: While the chicken is cooking, mix the diced roma tomatoes, salt and pepper to taste, fresh lemon juice, and finely chopped basil in a medium bowl. Stir well to combine all flavors.
  4. Melt the cheese: Once the chicken is cooked, top each breast with a slice of mozzarella cheese. Continue grilling for about 1 more minute until the cheese melts and becomes gooey.
  5. Assemble and serve: Remove the chicken from grill, spoon the tomato basil topping evenly over each piece, and serve immediately while hot and flavorful.
