Ingredients

French Toast Mixture

  • 1 loaf cinnamon bread (1 pound)
  • 1 cup milk
  • 2 tsp vanilla extract
  • 6 eggs
  • 2 tsp ground cinnamon
  • 2 tbsp real maple syrup

Toppings

  • 1/2 cup pecans, finely chopped
  • 2 cups fresh blueberries, divided


Instructions

  1. Prepare Grill or Campfire: Preheat grill to 350°F using indirect heat by turning on the two outside burners and leaving the middle burner off. Alternatively, prepare a campfire with a grill grate.
  2. Arrange Bread on Foil: Grease a heavy-duty tinfoil sheet double thickness about 24” x 18”. Arrange the slices of cinnamon bread on the foil leaving space around the edges, then bring up the sides of the foil to create a pan to hold the mixture.
  3. Make Egg Mixture: In a small bowl, whisk together eggs, milk, maple syrup, cinnamon, and vanilla extract until well combined.
  4. Soak Bread and Add Toppings: Pour the egg mixture evenly over the bread slices on the foil. Sprinkle with finely chopped pecans and 1 cup of fresh blueberries.
  5. Grill the French Toast: Place the foil pan on the grill using indirect heat or over the campfire grate. Cook for approximately 30-35 minutes or until the egg custard is fully set. Rotate the foil pan if needed to ensure even cooking.
  6. Rest and Serve: Remove from grill or campfire and let it rest for 10 minutes. Sprinkle the remaining 1 cup of fresh blueberries on top and serve with additional maple syrup if desired.
