Green Olive Sauce Ingredients
- 2 cups pitted Castelvetrano olives with brine (jarred or canned in brine)
- 6 tablespoons olive brine (from the jar or can)
- 1/2 cup packed fresh parsley leaves
- 2 tablespoons fresh chopped dill leaves
- 1/2 cup packed fresh basil leaves
- 2-3 medium garlic cloves
- 6 tablespoons extra virgin olive oil
- Salt, to taste
- Black pepper, to taste
Instructions
- Prepare Olives: Place the 2 cups of pitted Castelvetrano olives into the bowl of a food processor along with 6 tablespoons of the olive brine to help the sauce blend smoothly.
- Add Herbs and Seasonings: Add the half cup of packed fresh parsley, 2 tablespoons chopped fresh dill leaves, half cup packed fresh basil leaves, 2 to 3 medium garlic cloves, and 6 tablespoons of extra virgin olive oil. Then add a pinch each of salt and black pepper to start seasoning.
- Process to Smooth: Pulse and process the ingredients in the food processor until the mixture becomes a smooth sauce with a pesto-like texture.
- Adjust Seasoning: Taste the sauce and add more salt and/or pepper if needed to reach your desired flavor balance.
- Serve: Add the green olive sauce to cooked pasta as a flavorful topping, or use it as a spread on bread or a dip for vegetables. Enjoy immediately or refrigerate for later use.
