Ingredients
Sandwich Ingredients
- 4 slices whole grain bread
- 1/2 avocado, thinly sliced
- 1 tomatillo or green tomato, thinly sliced
- 2 slices havarti cheese
- 2 slices mozzarella cheese
- Handful baby spinach
- Handful alfalfa sprouts
For Cooking and Serving
- 1 tbsp butter
- Pickles, for serving
- Ketchup, for serving
Instructions
- Assemble the Sandwich: Place thinly sliced avocado evenly over each slice of bread. Layer 1 slice of havarti cheese on top of the avocado. Add a layer of thinly sliced tomatillo, then place 1 slice of mozzarella cheese over it. Add a handful of baby spinach, followed by the second slice of havarti cheese. Top this with alfalfa sprouts, then add the final slice of mozzarella. Complete the sandwich by placing the remaining slice of bread on top.
- Prepare the Pan: Butter a large frying pan and melt the butter over low to medium heat, ensuring the butter covers the surface evenly without burning.
- Cook the Sandwich: Place each sandwich carefully in the pan. Cover with a fitting lid to trap heat and help the cheese melt thoroughly. Cook each side for about 5 minutes.
- Flip and Finish Cooking: Flip the sandwiches and continue cooking, flipping as needed until all the cheese is fully melted and the bread is golden and crispy on both sides.
- Serve: Remove the sandwiches from the pan and serve immediately with pickles and ketchup on the side for added flavor and crunch.
Notes
- Using a lid while cooking helps the cheese melt evenly.
- Make sure to cook over low-medium heat to avoid burning the bread before the cheese melts.
- You can substitute havarti and mozzarella with other mild melting cheeses like provolone or gouda.
- Adding sprouts last keeps them fresh and crunchy in the sandwich.
- Tomatillos add a slight tang, but green tomatoes work well as a substitute if unavailable.
