Description

This Greek Yogurt Bark is a refreshing, healthy frozen treat perfect for a nutritious snack or breakfast. Creamy Greek yogurt is spread thin, topped with fresh berries and crunchy granola, then frozen into a delicious bark that combines sweet, tart, and crunchy textures in every bite.

Ingredients

Yogurt Base

  • 2 cups Greek full-fat yogurt (vanilla flavor recommended)

Toppings

  • 1/2 cup strawberries, sliced
  • 1/4 cup raspberries, sliced
  • 1/4 cup blueberries
  • 1/4 cup granola

Instructions

  1. Prepare the baking sheet: Line a rimmed baking sheet with parchment paper to prevent sticking and make removal easier.
  2. Slice the fruit: Cut the strawberries and raspberries into slices or pieces to distribute evenly on the yogurt.
  3. Spread the yogurt: Pour the Greek yogurt onto the prepared baking sheet and spread it evenly using a spatula to about 1/4 inch thickness for optimal freezing and texture.
  4. Add toppings: Evenly sprinkle the sliced strawberries, raspberries, blueberries, and granola over the yogurt layer for balanced flavor and crunch.
  5. Freeze: Place the baking sheet in the freezer and freeze for a minimum of 3 hours until the yogurt is solid and the bark is firm.
  6. Cut and store: Remove the frozen yogurt bark from the freezer, peel it off the parchment paper, and cut into bite-sized pieces. Store in an airtight container in the freezer to keep fresh.

Notes

  • You can customize the toppings with other fruits like kiwi, mango, or pomegranate seeds.
  • Use low-fat or fat-free Greek yogurt for a lighter version.
  • Make sure the yogurt is spread evenly for uniform freezing and easier breaking into pieces.
  • Store in the freezer for up to 2 weeks to maintain freshness and texture.
  • Use gluten-free granola if you need to keep the recipe gluten-free.
