Description

These Greek Lemon Potatoes are a delicious and easy side dish featuring crispy roasted Yukon Gold potatoes infused with bright lemon juice, fresh herbs, and garlic. Perfectly seasoned and baked to golden perfection, they make a versatile accompaniment to any meal.


Ingredients

Potatoes

  • 1 1/2 lb Yukon gold potatoes (~5-6 medium potatoes; cut into wedges, skin left on)

Seasoning & Marinade

  • 6 tbsp Lemon juice (from 3 lemons)
  • 1/4 cup Extra virgin olive oil
  • 1/4 cup Chicken broth, reduced sodium (or vegetable broth)
  • 1/4 cup Fresh parsley (chopped, plus more for serving)
  • 3/4 tsp Garlic powder
  • 1 tsp Dried oregano
  • 1/2 tsp Sea salt (plus more to taste at the end)
  • 1/4 tsp Black pepper (plus more to taste at the end)


Instructions

  1. Preheat Oven: Preheat the oven to 400 degrees F (204 degrees C) to prepare for roasting the potatoes.
  2. Prep Potatoes: Slice the Yukon gold potatoes into wedges about 1/2 inch thick at the widest part. Pat the cut sides dry thoroughly with paper towels to ensure crispiness.
  3. Season Potatoes: In a large bowl, combine the potato wedges with lemon juice, extra virgin olive oil, chicken broth, chopped parsley, garlic powder, dried oregano, sea salt, and black pepper. Toss well to evenly coat all the pieces.
  4. Initial Roast: Transfer the seasoned potato wedges and any remaining marinade to a large baking dish. Place in the middle rack of the oven and roast for 25 minutes to start cooking and infusing flavors.
  5. Toss and Increase Heat: Remove the potatoes carefully, toss them gently with a spoon or tongs to redistribute juices, and increase the oven temperature to 425 degrees F (218 degrees C).
  6. Final Roast: Return the potatoes to the oven and roast for an additional 20-25 minutes until the liquid evaporates and potatoes become crispy and golden brown on the edges.
  7. Season and Serve: Taste and add more salt and pepper if desired. Garnish with additional fresh parsley and serve warm as a delicious side dish.
