- 2 English cucumbers, sliced in half lengthwise and cut into large pieces

- 3.5 oz. jar capers, drained
- 3/4 cup red wine vinaigrette
- 8 oz. feta cheese, diced
Instructions
- Combine vegetables and capers: Add cucumbers, capers, bell pepper, cherry tomatoes, olives, red onion, and fresh dill into a large mixing bowl.
- Toss with dressing: Pour about 1/2 cup of the red wine vinaigrette dressing over the salad mixture and toss gently to coat all ingredients evenly with the dressing.
- Add feta cheese: Gently fold the diced feta cheese into the salad; alternatively, the feta can be added just before serving to maintain its texture.
- Finish with remaining dressing: Drizzle the remaining 1/4 cup of red wine vinaigrette over the salad just before serving, then season with salt and pepper to taste. Serve immediately and enjoy the bright, fresh flavors.
