Ingredients

  • 2 English cucumbers, sliced in half lengthwise and cut into large pieces
  • 1 cup diced red bell pepper
  • 1 cup halved cherry tomatoes
  • 1 cup halved pitted olives
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh dill

Other Ingredients

  • 3.5 oz. jar capers, drained
  • 3/4 cup red wine vinaigrette
  • 8 oz. feta cheese, diced


Instructions

  1. Combine vegetables and capers: Add cucumbers, capers, bell pepper, cherry tomatoes, olives, red onion, and fresh dill into a large mixing bowl.
  2. Toss with dressing: Pour about 1/2 cup of the red wine vinaigrette dressing over the salad mixture and toss gently to coat all ingredients evenly with the dressing.
  3. Add feta cheese: Gently fold the diced feta cheese into the salad; alternatively, the feta can be added just before serving to maintain its texture.
