Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper to ensure easy removal and clean-up.
  2. Make the Crust: In a mixing bowl, combine 1 cup all-purpose flour, 1/4 cup powdered sugar, and 1/2 tsp salt. Cut in the cold, cubed unsalted butter until the mixture resembles coarse crumbs. Press this crumbly mixture evenly into the lined baking pan.
  3. Bake the Crust: Bake the crust for 18-20 minutes until it turns a lovely golden color. This sets the base for the bars and gives a buttery, crisp texture.
  4. Prepare the Filling: While the crust bakes, whisk together 2 large eggs, 1 cup granulated sugar, 2 tbsp all-purpose flour, 1/3 cup fresh grapefruit juice, and 1 tbsp grapefruit zest in a bowl until smooth and fully combined.
  5. Bake the Filling: Pour the filling mixture evenly over the hot crust. Return the pan to the oven and bake for an additional 20-22 minutes until the filling is set and slightly firm to the touch.
  6. Cool and Chill: Remove the bars from the oven and allow them to cool to room temperature. Then chill in the refrigerator for at least 2 hours to fully set the filling for clean slicing.
