  • 1/2 - 1 teaspoon black pepper

Instructions

Avoid overcooking as they will finish cooking in the sauce. Reserve a small cup of the cooking water, then drain the gnocchi.
  2. Sauté Garlic: In a large skillet over medium heat, warm the olive oil. Add the finely diced or minced garlic and cook for 1–2 minutes until fragrant, taking care not to brown the garlic to prevent bitterness.
  3. Simmer Cream: Reduce the heat slightly and pour in the cream. Bring it to a very gentle simmer, stirring occasionally to prevent scorching.
  4. Melt Parmesan: Gradually add the grated parmesan in 2–3 additions, allowing each portion to melt fully into the creamy mixture before adding the next. This ensures a smooth and flavorful sauce.
  5. Add Pesto and Pepper: Stir in the pesto and black pepper, whisking continuously until the sauce is uniformly combined and smooth.
  6. Toss Gnocchi in Sauce: Add the drained gnocchi to the skillet, gently tossing to coat each piece evenly with the sauce. If using, stir in the fresh lemon juice to brighten the flavors.
