Ingredients
Chocolate filling:

- 75 g (¼ cup + 2 tbsp) caster/superfine or granulated sugar
- 1 US large/UK medium egg, room temperature
- ½ tsp vanilla bean paste (or 1 tsp vanilla extract)
- ⅛ tsp salt
Chocolate cookie dough:
- 170 g (1½ sticks) unsalted butter, softened
- 150 g (¾ cup) light brown soft sugar
- 3 US large/UK medium egg yolks, room temperature
- ½ tsp vanilla bean paste (or 1 tsp vanilla extract)
- 280 g (2⅓ cups) plain gluten free flour blend (recommended: Doves Farm Freee gluten free plain white flour or King Arthur Gluten-Free All-Purpose Flour)
- 45 g (⅓ cup + 2 tbsp) Dutch processed cocoa powder
- ¾ tsp baking powder
- ¾ tsp xanthan gum (omit if your gluten free flour blend already contains xanthan gum)
- ½ tsp salt
Additional:
- 100 g (½ cup) granulated sugar (for coating dough balls)
Swiss meringue:
- 2 US large/UK medium egg whites
- 100 g (½ cup) caster/superfine or granulated sugar
- ¼ tsp cream of tartar (or ½ tsp lemon juice)
- ½ tsp vanilla bean paste (or 1 tsp vanilla extract)
Instructions
- Prepare Oven and Baking Sheets: Adjust the oven rack to the middle position and preheat the oven to 350ºF (180ºC). Line two large baking sheets with parchment or baking paper to prevent sticking.
- Make the Chocolate Filling: In a saucepan over low heat, melt the dark chocolate, heavy cream, and butter together until completely melted. If the mixture looks split, don’t worry; it will become smooth later. Transfer to a bowl, let cool until warm, then add sugar, egg, vanilla, and salt. Whisk gently without aerating until smooth and glossy. Set aside.
- Prepare the Chocolate Cookie Dough: In a large bowl, cream together the softened butter and light brown sugar until pale and fluffy using a whisk or an electric mixer. Add egg yolks and vanilla, mixing well. In a separate bowl, whisk together gluten free flour blend, cocoa powder, xanthan gum, baking powder, and salt. Gradually add dry ingredients to wet and mix until a smooth, scoopable dough forms—firm but not sticky or dry.
- Shape and Coat Cookies: Pour granulated sugar in a small bowl. Using a 2-tablespoon cookie or ice cream scoop, scoop dough portions and roll into balls with your hands. Roll each ball in granulated sugar to coat evenly. Place on lined baking sheets, spaced 2 inches (5 cm) apart. Using a 1-tablespoon measuring spoon, create a smooth indent in the center of each dough ball for the filling. You should have 18-19 cookies total.
- Reheat Filling if Needed & Fill Cookies: If the chocolate filling has firmed, loosen it by placing its bowl inside a larger bowl with hot water, stirring until loose but not runny. Avoid microwaving. Fill each cookie indent with about 1 tablespoon of the filling. It will be full to the brim but won't overflow.
- Bake Cookies: Bake each baking sheet separately at 350ºF (180ºC) for 8-9 minutes until cookies have spread and puffed slightly, and the chocolate filling is still slightly wobbly when shaken. Remove from oven and let cookies cool on the baking sheet until warm and set, as they are fragile when hot.
- Prepare Swiss Meringue: Combine egg whites, sugar, and cream of tartar in a heat-proof bowl set over simmering water. Whisk constantly until mixture reaches 160ºF (70ºC) and sugar dissolves. Transfer to mixer and whisk on high for 5-7 minutes until volume increases greatly and stiff peaks form. Add vanilla and whisk briefly to combine.
- Pipe and Toast Meringue: Transfer Swiss meringue to a piping bag with your desired tip. Pipe generous dollops or patterns atop each cookie. Use a kitchen torch to toast the meringue to a light golden brown.
- Serve and Store: Enjoy cookies warm, at room temperature, or chilled. Reheat briefly in microwave (5-10 seconds) for extra gooey filling. Store unfrosted cookies in airtight container at room temperature for 2 days or refrigerated for 4-5 days. Cookies with Swiss meringue are best refrigerated and consumed within 2 days.

- If using Bob's Red Mill Gluten Free 1-to-1 Baking Flour, reduce flour amount to 75% of listed weight and add more gradually to reach proper dough consistency.
- Do not microwave chocolate filling to reheat; use a hot water bath to gently loosen filling without scrambling eggs.
