- ¼ tsp xanthan gum (leave out if your flour already has it)
- ½ tsp baking soda
- ¼ tsp gluten-free baking powder
- ½ tsp salt

- ¼ cup butter, softened (Dairy-free use Smart Balance Butter)
- 1 cup granulated sugar
- ½ cup buttermilk
- ½ tsp pure vanilla extract
- 1 egg
- ⅓ cup cocoa powder
- ⅓ cup boiling water
Chocolate Buttercream Frosting
- 1 cup butter (Dairy-free use Smart Balance butter)
- 2 tsp pure vanilla extract
- ¼ tsp pure almond extract
- 1 cup cocoa powder
- pinch salt
- 4 cups powdered sugar
- 3 tbsp milk (Dairy-free use cashew, almond or coconut milk)
Instructions
- Preheat Oven: Preheat your oven to 350°F (177°C) and prepare a muffin pan by lining it with cupcake liners or greasing it with gluten-free non-stick cooking spray to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, combine the gluten-free flour, xanthan gum (if your flour doesn't already contain it), baking soda, gluten-free baking powder, salt, and cinnamon if using. Stir well to evenly distribute all the dry ingredients.
- Cream Butter and Sugar: Using a mixer, cream the softened butter and granulated sugar together in a large bowl until the mixture becomes light and fluffy, which usually takes about 2-3 minutes on medium speed.
- Add Egg and Vanilla: Beat in the egg thoroughly followed by the vanilla extract, mixing until the wet ingredients are fully incorporated.
- Combine Dry and Wet Ingredients: Gradually add the dry flour mixture to the creamed butter mixture, mixing just until combined. Be sure to scrape down the sides of the bowl to ensure even mixing.

- Add Boiling Water: Carefully add the boiling water to the batter and mix until the batter is smooth and well-blended. The batter will be thin, which is normal for moist cupcakes.
- Fill Muffin Pan: Using a greased ice cream scoop or spoon, evenly fill the lined muffin pan cups with the batter to about 2/3 full to allow room for rising.
- Bake Cupcakes: Place the muffin pan in the preheated oven and bake for approximately 25 minutes. Check doneness by inserting a toothpick into the center of a cupcake; it should come out clean or with moist crumbs but no wet batter.
- Cool Cupcakes: Remove the cupcakes from the oven and allow them to cool completely on a wire rack before frosting, ensuring the frosting won't melt.
- Prepare Buttercream – Cream Butter: In a large bowl, beat the butter until smooth and creamy using a hand or stand mixer.
- Add Extracts: Mix in the vanilla and almond extracts until well combined to add flavor depth to the frosting.
- Add Cocoa Powder: Incorporate the cocoa powder into the butter mixture and beat until evenly blended.
