Description

These Gingerbread Cheesecake Cookie Cups are a festive holiday treat combining spicy gingerbread-flavored cookie shells with a smooth and creamy cinnamon-infused cheesecake filling. Perfect as an individual dessert for parties or cozy gatherings, they offer the perfect balance of spicy warmth and sweet creaminess in every bite.

Ingredients

Cookie Dough

  • 2 1/4 cups (293g) all-purpose flour
  • 2 1/2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of cloves
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup (168g) unsalted butter, room temperature
  • 2/3 cup (150g) packed brown sugar
  • 1 large egg
  • 3 tbsp (45ml) molasses

Cheesecake Filling

  • 12 oz (339g) cream cheese, room temperature
  • 1 3/4 cups (201g) powdered sugar
  • 1 1/2 tsp vanilla extract
  • 3/4 tsp ground cinnamon

Optional Toppings

  • Sprinkles (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (176°C) and prepare a cupcake or muffin pan by spraying it with non-stick spray to ensure the cookie cups release easily after baking.
  2. Mix Dry Ingredients: In a medium-sized bowl, combine flour, ground ginger, cinnamon, nutmeg, cloves, baking soda, and salt. Set aside this spiced flour mixture.
  3. Cream Butter and Sugar: Using a large mixing bowl, beat the room temperature butter and brown sugar together for 2-3 minutes until the mixture is light in color and fluffy, ensuring a tender cookie texture.
  4. Add Egg and Molasses: Add the egg and molasses to the creamed butter and sugar mixture, and mix until fully incorporated and the batter is smooth.
  5. Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture and mix until just combined, taking care not to overmix to keep the cookies tender.
  6. Form Cookie Cups: Use a cookie scoop or spoon to portion about 2 tablespoons of cookie dough. Press the dough into the bottom and about halfway up the sides of each cupcake pan cavity to form a cup shape.
  7. Bake Cookie Cups: Bake in the preheated oven for 8-10 minutes, or until the edges begin to turn golden. The centers may look slightly underbaked but will set as they cool.
  8. Cool and Shape Cups: Remove from oven and let the cups cool in the pan for about 10 minutes. Use the bottom of a measuring tablespoon to gently press into the middle of each cookie cup to maintain the shape if needed. Then transfer to a cooling rack to cool completely.
  9. Prepare Cheesecake Filling: In a clean bowl, beat together the cream cheese, powdered sugar, vanilla extract, and ground cinnamon until smooth and creamy without lumps.
  10. Fill Cookie Cups: Pipe or spoon the cheesecake filling into each cooled cookie cup, filling them generously without overflowing.
  11. Finish and Store: Optionally, top the filled cookie cups with sprinkles for a festive touch. Store the cookie cups in an airtight container in the refrigerator until ready to serve. They are best served slightly chilled or at near room temperature and are best eaten within 3-4 days.

Notes

  • Do not overmix the cookie dough after adding flour to keep the cookies tender.
  • Allow cookie cups to cool fully before filling to prevent melting the cheesecake filling.
  • Use room temperature cream cheese for smooth, lump-free filling.
  • Pressing the cookie dough into the pan carefully helps prevent cracking and maintains the cup shape.
  • Cookie cups can be made a day ahead and refrigerated until serving.
  • For firmer set cheesecake, chill the cookie cups for at least an hour before serving.
