This homemade sweet tea features a luscious peach-infused syrup made with vanilla, ginger, cinnamon, and nutmeg, perfectly blended with brewed black tea, chilled and served over ice. It's an ideal drink for hot summer days or any time you crave a flavorful, fruity iced tea.
Ingredients
Syrup Ingredients
- 2 peaches, pitted and cut into chunks
- 1 vanilla bean, split lengthwise (or 1 teaspoon vanilla extract)
- 1/2 inch fresh ginger, sliced into coins (or 1/4 teaspoon ground ginger)
- 1 cinnamon stick (or 1 teaspoon ground cinnamon)
- 1/4 teaspoon ground nutmeg
- 1 1/2 cups brown sugar (or cane sugar)
- 1 cup water
Tea Ingredients
- 8 cups water
- 8 black tea bags (preferably Lipton or Luzianne orange pekoe black tea)
- Ice, for serving
- Fresh mint, optional garnish
- Peach slices, optional garnish
Instructions
- Prepare the Syrup: Pit and cut the peaches into chunks, discarding the pits. Split the vanilla bean lengthwise and expose the seeds. Slice the ginger into coins.
- Combine Syrup Ingredients: In a small saucepan over medium heat, add peaches, the split vanilla bean, ginger coins, cinnamon stick, ground nutmeg, brown sugar, and 1 cup water. Stir occasionally until the sugar has dissolved.
- Boil and Mash: Bring the mixture to a boil, then remove the saucepan from the heat. Use a masher to muddle the peaches gently, releasing their juices into the syrup.
- Cool and Strain the Syrup: Allow the syrup to cool completely. Once cooled, strain out all solids including the peach chunks, vanilla bean, ginger, and cinnamon stick, leaving a smooth, flavorful syrup.
- Brew the Tea: While the syrup cools, bring 8 cups of water to a boil. Remove from heat and add the black tea bags, gently pressing them down to soak fully.
- Steep the Tea: Let the tea steep for 5 minutes. Remove the tea bags carefully without squeezing them to avoid bitterness, allowing excess liquid to drip back into the pot.
- Combine Syrup and Tea: Pour the strained syrup into a large pitcher with the brewed tea and stir to mix well.
- Chill and Serve: Refrigerate the sweet tea for at least 30 minutes until well chilled. Serve over ice and garnish with fresh mint and peach slices if desired.
Notes
- If fresh peaches are not available, frozen or canned peaches with no added sugar can be used for the syrup.
- For a stronger peach flavor, allow the syrup to steep longer before straining.
- Adjust the sweetness by varying the amount of brown sugar according to taste preferences.
- Vanilla extract can be used as a convenient substitute for vanilla bean, though it will slightly alter the depth of flavor.
- This tea can be stored in the refrigerator for up to 3 days for optimal freshness.
- To make this recipe vegan, ensure the sugar used is vegan-friendly (some brown sugars are processed with bone char).
