Instructions

  2. Peel garlic: Break the garlic heads into individual cloves and place them into a heatproof bowl. Pour boiling water over the cloves and let them sit for 5 minutes to loosen the skins. Drain and peel the cloves gently.
  3. Bake: Arrange the peeled garlic cloves and thyme sprigs into an ovenproof dish. Pour the olive oil over them ensuring the garlic is fully submerged to prevent burning. Bake in the preheated oven for 1 to 2 hours, or until the garlic cloves turn golden and soft when pressed.
  4. Serve and Store: Remove the dish from the oven and allow the garlic confit to cool to room temperature. Transfer the garlic and oil into an airtight container or jar. Store in the refrigerator for 2 to 3 weeks. Use as a spread, flavor enhancer, or cooking ingredient.
