Ingredients

For the Steak and Potatoes

  • 1 tbsp olive oil
  • 4 tbsp unsalted butter (divided, ½ stick)
  • 1 lb. Yukon Gold potatoes, diced into ½-inch cubes (or red-skinned or fingerling potatoes)
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • ½ tsp kosher salt
  • ½ tsp ground black pepper
  • lbs. sirloin steak, cut into 1-inch cubes (or beef tenderloin, NY strip steak, or stir fry meat)

For Garnish

  • Freshly chopped parsley (optional)


Instructions

  1. Heat the skillet: Heat a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Allow the butter to melt completely, coating the pan.
  2. Season the potatoes: Toss the diced potatoes with minced garlic, dried rosemary, dried oregano, kosher salt, and ground black pepper until evenly coated.
  3. Cook the potatoes: Add the seasoned potatoes to the skillet. Cook without stirring for about 4 minutes to develop a crisp exterior. Then stir and continue cooking an additional 3 to 4 minutes until the potatoes are fork-tender. Remove the potatoes from the pan and set aside in a bowl.
  4. Increase heat for steak: Return the skillet to the stove and increase the heat to high. Add the remaining 2 tablespoons of butter and stir until melted.
  5. Cook the steak bites: Add the sirloin steak cubes in a single layer to the hot skillet. Sear for 1 minute without moving, then flip or stir and cook for another 1 to 2 minutes, or until the steak reaches your desired doneness. Remove the skillet from heat.
  6. Toss potatoes with steak: Add the cooked potatoes back into the skillet with the steak bites. Toss everything together to combine and heat through. Adjust seasoning with additional salt and pepper, if desired.
  7. Garnish and serve: Sprinkle freshly chopped parsley over the top if using. Serve immediately and enjoy this savory garlic butter steak and potato dish.
