Ingredients
For the Steak and Potatoes
- 1 tbsp olive oil
- 4 tbsp unsalted butter (divided, ½ stick)
- 1 lb. Yukon Gold potatoes, diced into ½-inch cubes (or red-skinned or fingerling potatoes)
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried oregano
- ½ tsp kosher salt
- ½ tsp ground black pepper
- 1½ lbs. sirloin steak, cut into 1-inch cubes (or beef tenderloin, NY strip steak, or stir fry meat)
For Garnish
- Freshly chopped parsley (optional)
Instructions
- Heat the skillet: Heat a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Allow the butter to melt completely, coating the pan.
- Season the potatoes: Toss the diced potatoes with minced garlic, dried rosemary, dried oregano, kosher salt, and ground black pepper until evenly coated.
- Cook the potatoes: Add the seasoned potatoes to the skillet. Cook without stirring for about 4 minutes to develop a crisp exterior. Then stir and continue cooking an additional 3 to 4 minutes until the potatoes are fork-tender. Remove the potatoes from the pan and set aside in a bowl.
- Increase heat for steak: Return the skillet to the stove and increase the heat to high. Add the remaining 2 tablespoons of butter and stir until melted.
- Cook the steak bites: Add the sirloin steak cubes in a single layer to the hot skillet. Sear for 1 minute without moving, then flip or stir and cook for another 1 to 2 minutes, or until the steak reaches your desired doneness. Remove the skillet from heat.
- Toss potatoes with steak: Add the cooked potatoes back into the skillet with the steak bites. Toss everything together to combine and heat through. Adjust seasoning with additional salt and pepper, if desired.
- Garnish and serve: Sprinkle freshly chopped parsley over the top if using. Serve immediately and enjoy this savory garlic butter steak and potato dish.
