Herb Butter
- 1 cup salted butter (softened to room temperature)

- ¼ cup parsley (finely chopped to a dust-like texture)
- 1 tbsp white wine
- ½ tsp salt

Instructions
- Soften Butter: Remove butter from the fridge and leave it at room temperature until softened, which makes mixing easier.
- Prepare Escargots: Open the canned escargots and drain off the liquid. Rinse the escargots under cold water and let them drain thoroughly in a strainer for a few minutes to remove excess moisture.
- Prepare Garlic: Peel and finely mince about 10 cloves of garlic. Mince very finely to create a smooth texture; this process may take some time to achieve the best consistency.
- Prepare Shallot: Finely dice the shallot as small as possible, taking care not to macerate it into a paste.
- Prepare Parsley: Remove leaves from the parsley stems, stack them tightly, slice thinly, then mince until parsley assumes a flake or dust-like texture.
- Make Herb Butter: In a mixing bowl, combine the softened butter, minced garlic, diced shallot, chopped parsley, white wine, salt, and pepper. Mix thoroughly with a rubber spatula until fully incorporated. You may use an electric mixer, but it is not necessary.
- Assemble Escargots: Using a small spoon or teaspoon, scoop out a base layer of the garlic butter into each escargot shell or compartment of an escargot plate. Place one drained escargot on top, then cover with another scoop of butter. Press gently if needed to ensure the escargot is fully coated with butter.
- Alternative Assembly: If not using shells or an escargot plate, transfer approximately 1 cup of prepared garlic butter into a baking dish and arrange the escargots evenly, gently pressing them into the butter.
- Bake: Preheat the oven to 400ºF (205ºC). Bake the assembled escargots for 10-12 minutes until the garlic loses its raw taste and the edges of the butter begin to brown.
