- Heat the Oil: In a frying pan over medium-high heat, heat the olive oil until shimmering but not smoking.
- Sauté Onion: Add the finely diced onion to the pan and sauté for 2-3 minutes until softened and translucent, releasing its sweetness.
- Add Tomatoes and Pepper: Stir in the diced tomatoes and serrano pepper if using. Reduce the heat to low to allow the mixture to gently simmer.
- Simmer: Cook the mixture until the tomatoes soften and release their juices, creating a saucy texture, about 8-10 minutes. Stir occasionally to prevent sticking.
- Season: Add salt to taste and stir well to combine all the flavors.
- Serve: Remove from heat and serve hot with warm or toasted pita bread for dipping and scooping.
