Ingredients

Funfetti Cake

  • 1 box Funfetti Cake Mix plus ingredients as directed on the box

Ice Cream Layer

  • 1 Pint Vanilla Ice Cream

Whipped Cream Topping

  • 3 cups Heavy Whipping Cream
  • ¾ cups Granulated Sugar
  • 1 teaspoon Vanilla Extract

Decoration

  • Rainbow Sprinkles


Instructions

  1. Preheat and Prepare Pans: Preheat the oven to 350 degrees Fahrenheit. Grease and line two 8-inch round cake pans with parchment paper to prevent sticking.
  2. Bake Funfetti Cake: Prepare the Funfetti cake batter according to the directions on the box. Pour into the prepared pans and bake for about 22 minutes or until a toothpick inserted comes out clean. Allow cakes to cool completely before assembly.
  3. Make Whipped Cream: In a stainless-steel bowl, combine heavy whipping cream, granulated sugar, and vanilla extract. Whip the mixture until stiff peaks form, which will create a stable whipped cream for assembling the cake.
  4. Assemble Ice Cream Cake Layer 1: Line the bottom of a 9-inch springform or cheesecake pan with parchment paper. Spread a thin layer of whipped cream evenly over the parchment paper.
  5. Layer Cake and Ice Cream: Place one cooled 8-inch Funfetti cake layer into the pan on top of the whipped cream. Spread softened vanilla ice cream evenly over this cake layer and smooth the top to ensure an even layer.
  6. Top with Second Cake Layer: Place the remaining Funfetti cake layer on top of the ice cream layer, pressing gently to secure.
  7. Add Final Whipped Cream Layer: Spread the remaining whipped cream over the top cake layer evenly, smoothing it with a spatula to cover the entire surface.
  8. Freeze Cake: Place the assembled ice cream cake in the freezer for at least 6 hours, preferably overnight, to allow the layers to set firmly.
