Instructions
- Saute Aromatics: Warm the extra-virgin olive oil in a large pot over medium-high heat. Add the diced yellow onion and sauté until translucent, about 3 minutes. Then add the minced garlic, dried thyme, and fine sea salt, stirring continuously until the mixture becomes fragrant, about 1 minute.
- Boil: Pour in the vegetable broth and stir in the grated potato. Cover the pot with the lid slightly ajar and bring the mixture to a boil. Let it boil for about 10 minutes until the potato softens. Add the frozen peas and cook for an additional 2 to 3 minutes until the peas turn bright green and are heated through. Remove the pot from heat and stir in the baby spinach until wilted, if using.
- Blend: Using an immersion blender, carefully blend the soup until smooth. Alternatively, transfer the soup in batches to a standalone blender and puree. Taste and season with black pepper and additional salt if needed. Garnish as desired before serving.
