Ingredients

Banana Popsicles

  • 4 ripe bananas
  • 8 popsicle sticks

Chocolate Coating

  • 12 ounces chocolate chips (semi-sweet, milk, or dark as preferred)
  • 2 tablespoons coconut oil

  • Chopped peanuts (optional)
  • Sprinkles (optional)


Instructions

  1. Prepare the Bananas: Peel the bananas and cut each into halves. Insert a popsicle stick into the cut end of each banana half. Arrange the banana halves on a baking sheet lined with parchment paper. Cover with plastic wrap and place in the freezer for at least 3 hours until fully frozen.
  2. Prepare Toppings: While bananas freeze, place sprinkles and chopped peanuts into small bowls for easy access when decorating.
  3. Melt the Chocolate: Melt chocolate chips and coconut oil together by one of the following methods: microwave in 20-30 second bursts stirring in between, gently heat in a double boiler over medium heat stirring occasionally, or place the chocolate chips and coconut oil in a Mason jar in a pot of simmering water on medium heat, stirring until smooth. The Mason jar method allows easier dipping.
  4. Dip the Bananas: Remove frozen banana halves from parchment. Dip each banana half into the melted chocolate, letting excess drip off. Immediately sprinkle with nuts or sprinkles as desired. Place dipped bananas back on the parchment-lined baking sheet to set.
  5. Set and Serve: Allow the chocolate to harden completely. Serve immediately or wrap each popsicle tightly with plastic wrap and store in the freezer. Before eating, let frozen popsicles sit at room temperature for 5-10 minutes to soften slightly.
