Instructions
- Caramelize Onions: Preheat oven to 400°F for baking or set to low broil. In a large oven-safe skillet over medium-high heat, melt the butter. Add sliced onions and 3 tablespoons of beef broth, sauté for 3-4 minutes until onions become translucent. Continue cooking for about 15 minutes more, stirring occasionally to prevent burning, until onions are deeply browned and tender. Use tongs or a fork to transfer onions to a bowl and cover to keep warm.
- Season and Brown Chicken: While onions cook, drizzle the chicken breasts with oil and season with salt, pepper, and Italian herbs. After removing onions from the pan (but without cleaning it), place chicken breasts in the skillet and brown on each side for 4-5 minutes. The chicken does not need to be fully cooked at this point.
- Prepare Onion Gravy: Transfer browned chicken to a plate and keep warm. Return onions to the skillet and sprinkle flour evenly over them. Stir the mixture continuously for 1 minute over medium-high heat. Gradually pour in the remaining beef broth and stir until the sauce comes to a boil. Season with salt and pepper to taste. Place the chicken breasts back into the skillet and spoon some sauce over each piece.
- Add Cheeses and Bake: Top each chicken breast with one slice of provolone, one slice of Swiss, and a quarter of the Parmesan cheese. Transfer the skillet to the preheated oven and bake for about 10 minutes until the chicken is cooked through completely and the cheese has melted beautifully.
- Serve and Garnish: Spoon extra onions and gravy from the pan over the chicken. Garnish with fresh thyme or parsley and a sprinkle of cracked black pepper, then serve immediately for a comforting and flavorful meal.
