Ingredients
Egg Mixture
- 12 eggs
- 2 Tablespoons milk
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Meat & Cheese
- 12 slices cooked bacon, sausage patties, ham, or Canadian bacon
- 12 slices cheddar cheese, or your favorite cheese
Bread
- 12 English muffins
Instructions
- Preheat and prepare pan: Preheat your oven to 325 degrees Fahrenheit. Generously grease a 9x13 inch baking pan to prevent sticking.
- Mix eggs: In a mixing bowl, whisk together the eggs, milk, salt, and freshly ground black pepper. Using an electric mixer makes this easier and helps create a fluffy egg mixture.
- Bake eggs: Pour the egg mixture into the greased pan and bake at 325 degrees for 18 to 22 minutes. Bake until the eggs are just set in the center but avoid overcooking to keep them tender.
- Cool and cut eggs: Remove the baked eggs from the oven and let them cool completely. Once cooled, cut the egg sheet into 12 equal squares to fit each sandwich.
- Assemble sandwiches: Split English muffins in half and layer each bottom half with a square of baked eggs, a slice of cheese, and a slice of your chosen meat. Top with the other muffin half. If eating immediately, heat sandwiches at 350 degrees Fahrenheit for about 5 minutes until the cheese melts.
- Freeze sandwiches: Wrap each assembled sandwich individually in tinfoil, wax paper, or parchment paper. Place all wrapped sandwiches into a freezer-safe resealable bag. Freeze for up to 1 month.
- Reheat from frozen: For best results, thaw sandwiches overnight in the refrigerator. Remove wrapping paper and wrap sandwich in a paper towel. Microwave on defrost/50% power for 40 seconds to 1 minute, then flip and microwave 10 to 30 seconds on high until heated through. Alternatively, reheat sandwiches in an oven or toaster oven at 350 degrees Fahrenheit for 10 to 15 minutes.
Notes
- Use any cooked breakfast meat you prefer, such as bacon, sausage patties, ham, or Canadian bacon.
- Cheddar cheese works best for melting, but feel free to swap with your favorite cheese.
- Do not overbake the eggs to ensure they remain soft and tender.
- Individually wrapping sandwiches helps prevent freezer burn and keeps them fresh.
- To save time, you can prepare multiple batches and freeze for up to one month.
- Reheating times may vary depending on microwave wattage or oven efficiency.
