Ingredients

For the Reduction

  • 1/4 cup white wine
  • 2 tablespoons white wine vinegar
  • 2 tablespoons minced shallot (can substitute onion if necessary)
  • 1/4 teaspoon coarsely ground black pepper (or 4 crushed black peppercorns)
  • 1/4 teaspoon salt
  • 1 tablespoon fresh tarragon
  • 1 tablespoon fresh chervil (can substitute more tarragon if you can't find chervil)

  • 4 large fresh egg yolks
  • 3/4 cup (1 1/2 sticks) unsalted butter, cut into cubes
  • 2 teaspoons chopped fresh tarragon (to stir in at end)


Instructions

  1. Prepare the reduction: Combine the white wine, white wine vinegar, minced shallots, coarsely ground black pepper, salt, fresh tarragon, and fresh chervil in a small saucepan. Simmer gently until the liquid is reduced by half to about 3 tablespoons. Do not strain the mixture. Remove from heat and allow it to cool completely before proceeding.
  2. Blend the reduction with egg yolks: Pour the cooled reduction mixture into a blender along with the four large egg yolks. Blend the mixture on medium speed until smooth and fully combined, forming the base of the Béarnaise sauce.
  3. Melt the butter: While blending, melt the unsalted butter in a small saucepan or microwave until hot and fully melted. Ensure the butter is very hot but not browned.
  4. Incorporate melted butter: With the blender running on HIGH, gradually pour the hot melted butter in a steady thin stream through the blender cap’s center hole (remove the stopper if present). Continue blending for about 30 seconds or until the sauce achieves a thin mayonnaise-like consistency. If the sauce remains too thin, blend an additional 5 seconds and check again.
  5. Finish and serve: Stir in the 2 teaspoons of chopped fresh tarragon for added flavor. Serve the Béarnaise sauce immediately while warm. Alternatively, keep the sauce warm by placing the blender container in a sink or bowl filled with warm water until ready to use. Note that Béarnaise can also be served at room temperature or cold depending on preference. Refer to blog instructions for reheating tips if needed.

  • Use fresh herbs for the best flavor; dried herbs will not provide the same vibrant taste.
