Description

Flødeboller are traditional Danish chocolate-covered marshmallow domes that combine a crisp cookie base with fluffy meringue and a rich tempered chocolate coating. Ingredients

Cookie Base

  • 35 grams (2.5 tbsp) unsalted butter, melted
  • 50 grams (1/4 cup) sugar
  • 1/2 egg (beat one egg and divide)
  • 1/2 tsp vanilla extract
  • 80 grams (2/3 cup) all purpose flour
  • 1/2 tsp baking powder
  • Pinch of salt

Meringue Filling

  • 150 grams (3/4 cup) sugar
  • 60 ml (1/4 cup) water
  • 3 large egg whites, room temperature
  • A splash of lemon juice
  • 1/2 tsp vanilla extract

Coating

  • 1.5 lbs (680 grams) chocolate for tempering (preferably couverture or high-quality baking chocolate)


Instructions

  1. Preheat and prepare the oven: Preheat your oven to 365°F (185°C) and line a baking sheet with parchment paper.
  2. Make the cookie dough: In a medium mixing bowl, combine melted butter, sugar, half an egg, and vanilla extract. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until a cohesive dough forms.
  3. Roll out and cut cookies: Flour a surface well and roll out the dough to about 1/8 inch thickness. If the dough is sticky, chill for 15-30 minutes or add a bit more flour. Use a cookie cutter or glass rim to cut 2-inch diameter circles. Transfer to the baking sheet.
  4. Bake the cookie bases: Bake for 8-10 minutes until the edges turn lightly golden. Remove and let cool completely on a wire rack.
  5. Prepare sugar syrup for meringue: Combine sugar and water in a small saucepan. Heat over medium without stirring until sugar dissolves and syrup reaches 230°F to 235°F (110°C to 112°C) using a candy thermometer.
  6. Whip egg whites: In a stand mixer bowl, add egg whites and a splash of lemon juice. Beat on medium speed until foamy and roughly doubled in size. Add vanilla extract and briefly mix to combine.
  7. Combine syrup and egg whites: With the mixer on medium-low, slowly pour in the hot sugar syrup into the egg whites in a steady stream. Continue beating until stiff, glossy peaks form and meringue cools to room temperature.
  8. Assemble meringue on cookies: Pipe or spread the meringue generously onto the cooled cookie bases, smoothing the tops evenly. Let the domes rest at room temperature for about one hour to dry out slightly and form a moisture barrier.
  9. Temper the chocolate: Melt about two-thirds of the chocolate in a double boiler, stirring constantly and keeping temperature between 110°F and 115°F (43°C - 46°C). Remove from heat and add the remaining chocolate (seed chocolate), stirring continuously until cooled to 86°F to 87°F (30°C - 31°C). Test temper by spreading a little chocolate on parchment and checking for set, snap, and shine.
  10. Coat the flødeboller: Quickly dip or spoon tempered chocolate over each meringue dome ensuring full coverage. Optionally sprinkle shredded coconut onto chocolate before it sets. Work fast and reheat chocolate gently if it begins to harden during coating.
  11. Set and serve: Allow the chocolate to set at room temperature if tempered correctly, or chill in the refrigerator if not tempered. Once the chocolate shell hardens, enjoy your authentic Danish flødeboller!
