Description

A hearty and comforting Farmer’s Casserole featuring layers of shredded hash browns, Monterey Jack cheese, ham, and green onions, baked in a savory egg and evaporated milk custard. Perfect for a satisfying breakfast or brunch, this casserole can be prepared ahead and baked to golden perfection.

Ingredients

Ingredients

  • 3 cups frozen shredded hash brown potatoes
  • 3/4 cup shredded Monterey Jack cheese
  • 1 cup cubed fully cooked ham
  • 1/4 cup chopped green onions
  • 4 large eggs
  • 1 can (12 ounces) evaporated milk
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt

Instructions

  1. Prep the casserole dish: Place the frozen shredded hash brown potatoes evenly into an 8-inch baking or casserole dish, forming the base layer of the casserole.
  2. Add cheese, ham, and onions: Sprinkle the shredded Monterey Jack cheese, cubed fully cooked ham, and chopped green onions evenly over the potatoes in the baking dish.
  3. Mix the egg custard: In a large bowl, whisk together the eggs, evaporated milk, pepper, and salt until fully combined to create a smooth custard mixture.
  4. Combine and refrigerate: Pour the egg mixture evenly over the layered ingredients in the baking dish. Cover the casserole and refrigerate for several hours or overnight to allow the flavors to meld and the mixture to set.
  5. Prepare for baking: Remove the casserole from the refrigerator and allow it to stand at room temperature for 30 minutes before baking. Meanwhile, preheat the oven to 350°F (175°C).
  6. Bake the casserole: Bake the uncovered casserole in the preheated oven for 55 to 60 minutes, or until a knife inserted in the center comes out clean and the top is golden and set.

Notes

  • Refrigerating the casserole overnight helps flavors develop and makes slicing easier after baking.
  • You can substitute Monterey Jack cheese with cheddar or Colby cheese for a different flavor.
  • Use fully cooked ham, but leftover ham or diced cooked bacon can also be used.
  • If you don’t have evaporated milk, you can substitute with whole milk, but the texture may be slightly less creamy.
  • Letting the casserole rest after baking for 10 minutes before serving helps it set perfectly.
