Beef Rolls

Instructions

  1. Prep the Enoki Beef Rolls: Divide the enoki mushrooms into 12 small bunches. Take each slice of thinly sliced beef and roll it tightly around one bunch of enoki mushrooms to form individual rolls.
  2. Mix the Sauce: In a small bowl, combine the dashi broth, mirin, soy sauce, sugar, and black pepper. Stir until the sugar dissolves and the sauce is well mixed.
  3. Cook the Onions: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced yellow onions and cook, stirring occasionally, until they become slightly browned, caramelized, and translucent. This should take about 3 to 5 minutes.
  4. Add the Enoki Beef Rolls and Sauce: Place the prepared beef rolls in a single layer on top of the caramelized onions in the skillet. Pour the sauce evenly over the beef rolls. Cover the skillet with a lid and cook for 3 minutes. Then, carefully flip each beef roll and cook uncovered for another 1 to 2 minutes until the beef is cooked through.
  5. Add the Egg: In a separate bowl, lightly beat the eggs. Drizzle the beaten eggs over the enoki beef rolls in the skillet. Lower the heat and let the eggs gently cook and set for about 2 minutes until fully cooked.
