Description

These fluffy and creamy egg bites are a perfect protein-packed breakfast or snack, made easy by blending eggs with cottage cheese and cheddar, then baking in a muffin pan. They are customizable with your favorite mix-ins like veggies or bacon, and store well for busy mornings.

Egg Mixture

  • 8 large eggs
  • 1 cup cottage cheese (4% or low-fat)
  • ½ cup shredded sharp cheddar cheese
  • ¼ teaspoon fine salt
  • Pinch of black pepper
  • Fresh chives, roughly chopped (for topping)

Instructions

  1. Prepare muffin pan: Lightly mist the cups of a silicone muffin pan with cooking spray to prevent sticking. Preheat your oven to 350℉ to get it ready for baking.
  2. Blend ingredients: In a blender, combine the eggs, cottage cheese, shredded cheddar cheese, salt, and pepper. Blend until the mixture is smooth and creamy, ensuring even texture throughout. A small blender like a Nutribullet works well for this step.
  3. Fill muffin cups: Divide the blended egg mixture evenly into the silicone muffin pan cups, filling each about halfway. Sprinkle the tops with roughly chopped fresh chives. At this point, you can also add optional mix-ins such as chopped vegetables or cooked bacon for added flavor and texture.
  4. Bake egg bites: Place the muffin pan in the preheated oven and bake for 20-22 minutes. Bake until the egg bites are slightly firm to the touch in the center and puffed up.
  5. Cool and remove: Take the muffin pan out of the oven. The egg bites will be puffed but will settle down as they cool. Let them cool for a few minutes before carefully removing them from the pan to maintain their shape.
  6. Store leftovers: Store the egg bites in an airtight container in the refrigerator. They will keep fresh for up to 5 days, making them convenient for quick breakfasts or snacks throughout the week.
