Ingredients
Vegetables
- 1 pound baby Bella mushrooms, sliced
- 3 cloves garlic, sliced
- 2 Tbsp fresh parsley, minced
Seasonings
- 1/2 tsp kosher salt
- 1/4 tsp kosher salt (additional)
- 1/2 tsp chili flakes (optional)
Oils
- 1/4 cup olive oil
- 2 Tbsp extra virgin olive oil
Instructions
- Saute garlic: Heat 1/4 cup olive oil in a pan over medium-low heat. Add sliced garlic and cook until golden, about 2 minutes. Remove the garlic from the pan and set aside to prevent burning.
- Cook mushrooms: Increase heat to medium-high and add sliced mushrooms to the pan. Saute for 1-2 minutes until they start to soften. Sprinkle 1/4 teaspoon kosher salt to encourage moisture release. Continue cooking for about 3 minutes until the mushrooms release their water, then cook for an additional 1-2 minutes until they are nicely browned.
- Season and finish: Season the mushrooms with the remaining 1/4 teaspoon kosher salt, chili flakes if using, and minced parsley. Turn off the heat and drizzle 1-2 tablespoons of extra virgin olive oil on top. If desired, add the reserved cooked garlic back into the pan for extra flavor. Serve warm and enjoy!
Notes
- For a milder garlic flavor, remove the garlic as soon as it turns golden to prevent bitterness.
- Adjust chili flakes according to your preferred spice level or omit if sensitive to heat.
- Use fresh parsley for the best vibrant flavor; dried parsley can be substituted but reduce quantity to 1 tablespoon.
- Best served immediately but can be stored in the refrigerator for up to 2 days.
