Description

This Easy Mediterranean White Bean Salad is a vibrant, fresh, and healthy dish that brings together creamy cannellini beans, crisp cucumbers, juicy tomatoes, Kalamata olives, and tangy feta cheese, all tossed in a zesty lemon-oregano dressing. Perfect as a light lunch or a side, it's quick to prepare and bursting with Mediterranean flavors.

Ingredients

Dressing

  • 1 large lemon, zest and juice
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/4 tsp ground black pepper
  • 1/4 tsp kosher salt

Salad

  • 2 15 oz cans cannellini beans (drained and rinsed)
  • 1 English cucumber (diced)
  • 10 oz grape or cherry tomatoes (halved)
  • 1/3 cup kalamata olives (pitted and chopped)
  • 1 cup flat leaf parsley (chopped)
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Make the dressing: Whisk together the lemon juice, olive oil, dried oregano, red pepper flakes, ground black pepper, and kosher salt in a bowl until well combined. Set the dressing aside to let the flavors blend.
  2. Prepare the salad ingredients: In a large mixing bowl, add the drained and rinsed cannellini beans, diced English cucumber, halved grape or cherry tomatoes, chopped kalamata olives, chopped flat leaf parsley, and crumbled feta cheese.
  3. Combine and toss: Drizzle the prepared dressing over the salad ingredients. Gently toss everything together until all components are evenly coated with the dressing.
  4. Serve or chill: Serve the salad immediately for a fresh taste or refrigerate it for some time to allow the flavors to meld harmoniously before serving.

Notes

  • For extra flavor, allow the salad to chill for at least 30 minutes before serving.
  • Use fresh lemon juice for the best tang and brightness in the dressing.
  • Kalamata olives can be left whole if preferred; chopping distributes flavor more evenly.
  • Can be served as a side dish or light main course.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
