Ingredients
Dressing
- 1 large lemon, zest and juice
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1/4 tsp ground black pepper
- 1/4 tsp kosher salt
Salad
- 2 15 oz cans cannellini beans (drained and rinsed)
- 1 English cucumber (diced)
- 10 oz grape or cherry tomatoes (halved)
- 1/3 cup kalamata olives (pitted and chopped)
- 1 cup flat leaf parsley (chopped)
- 1/2 cup feta cheese, crumbled
Instructions
- Make the dressing: Whisk together the lemon juice, olive oil, dried oregano, red pepper flakes, ground black pepper, and kosher salt in a bowl until well combined. Set the dressing aside to let the flavors blend.
- Prepare the salad ingredients: In a large mixing bowl, add the drained and rinsed cannellini beans, diced English cucumber, halved grape or cherry tomatoes, chopped kalamata olives, chopped flat leaf parsley, and crumbled feta cheese.
- Combine and toss: Drizzle the prepared dressing over the salad ingredients. Gently toss everything together until all components are evenly coated with the dressing.
- Serve or chill: Serve the salad immediately for a fresh taste or refrigerate it for some time to allow the flavors to meld harmoniously before serving.
Notes
- For extra flavor, allow the salad to chill for at least 30 minutes before serving.
- Use fresh lemon juice for the best tang and brightness in the dressing.
- Kalamata olives can be left whole if preferred; chopping distributes flavor more evenly.
- Can be served as a side dish or light main course.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
