Instructions
- Prepare the radishes: Wash the radishes thoroughly, trim off both ends, and cut each radish in half or into thirds to ensure even cooking.
- Boil radishes: Place the radishes in a pot and cover them with water. Bring to a boil, then reduce heat and simmer until the radishes are tender, about 15-20 minutes. Meanwhile, grate the garlic finely on a microplane for smooth texture.
- Drain and dry: Once tender, drain the radishes and return them to the pot. Let them sit for a minute to allow excess moisture to evaporate for a better mash consistency.
- Mash the radishes: Add butter or olive oil to the pot and begin mashing the radishes with a potato masher or fork. For a smoother mash, use a food processor or hand blender. If the mash is not smooth with a blender, radishes may need additional cooking.
- Add cream and garlic: Stir in heavy cream and the minced garlic, continuing to mash until you reach the desired creamy consistency. Add more cream or half & half gradually if you prefer a thinner mash.
