Ingredients

Meat

  • 1 pound ground hot or mild Italian sausage

Liquids & Sauces

  • 1 (24-ounce) jar tomato-basil sauce
  • 5 cups water, divided

Seasonings

  • 1/2 teaspoon kosher salt

Pasta

  • 6 uncooked lasagna noodles, broken into 2-inch pieces

Cheese

  • 3/4 cup (3 ounces) shredded Italian cheese blend
  • 3/4 cup whole milk ricotta cheese

Garnish

  • Chopped fresh basil, for garnish (optional)


Instructions

  1. Cook the sausage: Heat a large Dutch oven over medium-high heat. Add the ground Italian sausage and cook, stirring frequently and breaking it into small pieces, until browned, crumbled, and thoroughly cooked, about 6 to 9 minutes. Adjust the heat as needed to avoid overbrowning.
  2. Add the liquid ingredients: Stir in the tomato-basil sauce to the browned sausage. Pour 1/2 cup of water into the empty sauce jar, swirl to loosen any remaining sauce, and add that to the Dutch oven. Add the kosher salt and the remaining 4 1/2 cups of water. Scrape the bottom of the pot to dissolve any browned bits, then bring the mixture to a boil over medium-high heat.
  3. Cook the noodles: Add the broken lasagna noodles to the boiling soup. Reduce heat to medium and cook, stirring occasionally, until the noodles are tender but still al dente, approximately 12 to 16 minutes.
  4. Make the ricotta mixture: While the noodles cook, combine the shredded Italian cheese blend and the whole milk ricotta cheese in a small bowl. Stir until evenly blended and set aside.
  5. Serve and garnish: Remove the soup from heat. Ladle the soup into 4 bowls and evenly top each serving with dollops of the ricotta cheese mixture. Garnish with freshly chopped basil if desired. Leftovers can be refrigerated in an airtight container for up to 3 days and reheated on the stovetop over medium-low heat, adding a little water to loosen the soup.
