Description

This Easy Kulfi Recipe with Condensed Milk is a traditional Indian frozen dessert made creamy and rich with condensed milk, evaporated milk, and double cream. Ingredients

Milk Mixture

  • 2/3 cup condensed milk (170 ml)
  • 1 cup evaporated milk (250 ml)
  • 1 cup double cream (heavy cream, 250 ml)
  • 1/2 tsp ground cardamom (or crushed cardamom)
  • a pinch of saffron threads

Garnish

  • 1/4 cup chopped pistachios (30 g)


Instructions

  1. Mix Cream and Milks: In a jug, combine the double cream, condensed milk, and evaporated milk thoroughly to create a smooth, creamy base for the kulfi.
  2. Add Spices: Stir in the ground cardamom and pinch of saffron threads evenly into the milk mixture to infuse aromatic flavor and color.
  3. Prepare Cups with Pistachios: Distribute half of the chopped pistachios among 5 disposable plastic cups, ensuring each cup has an even layer of nuts at the bottom.
  4. Pour Milk Mixture: Pour the condensed milk mixture into each cup, filling them to about one-quarter full over the pistachios.
  5. Top with Remaining Pistachios: Sprinkle the remaining chopped pistachios on top of the milk mixture in each cup for added texture and visual appeal.
  6. Cover and Insert Sticks: Cover each cup with kitchen foil and cut a small slit in the center of the foil. Insert ice cream or popsicle sticks through these slits so they stand upright in the kulfi.
  7. Freeze: Place the cups in the freezer and freeze for at least 3 hours until the kulfi is firm and set.
  8. Serve: To unmold, dip each cup briefly in hot water for a few seconds to loosen the kulfi, then gently remove the frozen dessert from the cups and enjoy.

Notes

  • You can substitute pistachios with almonds or cashews if preferred.
  • For a vegan version, use coconut cream and plant-based condensed milk alternatives.
