Description

This easy horchata recipe offers a refreshing and creamy traditional Mexican drink made from soaked rice, cinnamon, and sweetened milk. It is naturally sweetened with maple syrup and can be prepared with dairy or dairy-free milk, making it a versatile and delightful beverage perfect for any occasion.

Ingredients

Base Ingredients

  • 1 cup long-grain white rice (rinsed)
  • 4 cups water
  • 2 cinnamon sticks

Additional Ingredients

  • 2 cups milk (dairy or dairy-free milk)
  • ⅓ cup maple syrup (or other sweetener)
  • 1 teaspoon vanilla extract

Instructions

  1. Blend Rice and Cinnamon: Add the rinsed rice, water, and cinnamon sticks to a high-powered blender. Blend for about 40 to 60 seconds until the rice and cinnamon sticks are ground into a fine mixture.
  2. Chill Mixture: Pour the blended mixture into a large container, cover it well, and let it chill inside the refrigerator for 8 to 12 hours or preferably overnight to allow the flavors to infuse and the rice to soften.
  3. Strain the Mixture: After chilling, strain the mixture through a nut-milk bag or fine mesh sieve into a pitcher to separate the rice solids and cinnamon remnants from the liquid base.
  4. Add Flavors and Sweeten: Stir in the milk of your choice, vanilla extract, and maple syrup. Taste and adjust the sweetness by adding more sweetener if desired.
  5. Serve and Garnish: Serve the horchata over ice and garnish with freshly ground cinnamon or additional cinnamon sticks for an extra touch of flavor and presentation.

Notes

  • For a creamier texture, use whole milk or a creamy dairy-free alternative such as coconut milk.
  • Maple syrup can be substituted with agave nectar, honey (if not vegan), or white sugar according to preference.
  • Soaking the rice longer enhances the flavor infusion and softens the rice further.
  • Store horchata in the refrigerator and consume within 3 to 4 days for the best taste and freshness.
  • Shake or stir well before serving as ingredients may settle.
