Ingredients
Chocolate Cake
- 1 Cup (133g) all purpose flour
- 3/4 Cup (150g) granulated sugar
- 1/3 Cup (30g) unsweetened natural cocoa powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 Cup (60ml) vegetable oil
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 1/2 Cup (120ml) full-fat buttermilk, room temperature
- 1/2 Cup (120ml) hot coffee or hot water
Chocolate Mousse
- 2 Cups (370g) semi-sweet chocolate chips
- 2 1/3 Cups (560ml) heavy whipping cream, divided
- 2 Tbsp powdered sugar
- 2 tsp pure vanilla extract
- 1 tsp instant coffee or espresso powder (optional)
Chocolate Ganache
- 1/2 Cup (93g) semi-sweet chocolate chips
- 1/2 Cup (120ml) heavy whipping cream
Garnish
- 3 Oz fresh raspberries
- 2 Oz chocolate covered espresso beans
Instructions
- Make the Chocolate Cake: Preheat the oven to 350ºF (177ºC) and prepare a 9-inch springform pan by spraying the sides with cooking spray and fitting the bottom with a parchment circle. Optionally, wrap the outside with aluminum foil to prevent leakage. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add vegetable oil, egg, vanilla, and buttermilk and whisk until smooth. Slowly stream in the hot coffee or water and mix until combined; the batter will be thin.
- Bake the Cake: Pour the batter into the prepared pan and bake for 25-30 minutes until a toothpick inserted into the center comes out clean. Let the cake cool completely before proceeding.
- Prepare the Chocolate Mousse Ganache: Place the semi-sweet chocolate chips in a bowl. Heat 1 cup (240ml) of heavy cream in a small saucepan over medium-low heat until it begins to simmer around the edges. Pour the hot cream over the chocolate and whisk until smooth and glossy. Let cool to room temperature, about 25 minutes.
- Whip the Cream for Mousse: In a stand mixer bowl fitted with a whisk or using a hand mixer, combine the remaining 1 1/3 cups (320ml) of heavy cream, powdered sugar, vanilla extract, and instant coffee or espresso powder (if using). Beat starting on low speed to combine ingredients, then increase to high and whip until stiff peaks form, approximately 4 minutes.
- Combine Mousse: Gently fold the whipped cream mixture into the cooled chocolate ganache with a rubber spatula until no streaks remain, creating the mousse.
- Assemble the Cake: Remove the cooled cake from the pan. Level the cake surface using a serrated knife or leveler, and peel off the parchment paper from the bottom. Place the cake back into the springform pan. Wrap an acetate cake collar around the cake and secure with tape to contain the mousse layer.
- Add Mousse Layer: Spoon the chocolate mousse over the cake layer and smooth it evenly with an angled spatula to the edges of the acetate collar. Refrigerate the cake for at least 6 hours or overnight to set.
- Make the Chocolate Ganache Topping: Place semi-sweet chocolate chips in a bowl. Heat 1/2 cup (120ml) heavy cream in a small saucepan over medium heat until it simmers, whisking frequently. Pour hot cream over chocolate chips and whisk until smooth. Allow the ganache to cool to room temperature, about 20 minutes.
- Decorate the Cake: Once the mousse layer is set, remove the springform collar and acetate. Pour the cooled ganache evenly over the top of the chilled mousse cake, spreading with an angled spatula and letting it drip slightly over the edges for an elegant look. Garnish with fresh raspberries and chocolate covered espresso beans arranged in a crescent shape. Serve immediately or refrigerate until ready to serve.
